Oil-Free Italian Salad Dressing (Perfect for Summer)
Oil is optional in this yummy Italian dressing. Try it on green salads, pasta salads, wraps, and roasted veggies!

Ingredients
tomato | 1.4 lbs |
garlic | 0.3 oz |
white onion | 2 oz |
red wine vinegar | 1.5 oz |
fresh thyme | 2 tsp |
salt | 2 tsp |
Directions
If You Have a Juicer
Remove core tops of tomato, juice with garlic and white onion.
Pick thyme from the stems and finely chop.
Mix remaining ingredients together, season with salt.
If You Don't Have a Juicer
Remove core tops of tomato, blend with garlic and white onion (or use a food processor).
Strain the blended produce into a bowl (or use a cheese cloth).
Pick thyme from the stems and finely chop.

Pro tips
Add grapeseed oil (or any light, neutral flavored oil) to serve as a vinaigrette.
Serve on its own for an oil-free version.
Prefer creamy dressings? Add a dollop of yogurt!
Not a fan of red wine vinegar? Try subbing balsamic vinegar, apple cider vinegar, or lemon juice.
Substitute a few teaspoons of garlic powder or onion powder if you’re out of garlic or onions.
If you don’t have fresh thyme, you can use dried thyme, dried oregano, or even Italian seasoning.
If you like black pepper, be sure to add that during the final step as well!
