How Smart Fridges Enable Off-Site Raw Juice Sales
On the Goodnature Radio Podcast last week, our guest Kaitlin Soto (founder of Flourish Juice Co) detailed for us how her small raw juice bar has been using a smart fridge (Byte Technology) as a high-tech juice vending machine. Basically, the way the fridge works is that it automatically knows what's inside, using RFID-tagged juice bottles (it works on any products, not just juice). A customer that's interested in purchasing swipes their credit card, then they can open the door and take what they want. The fridge then charges the card for the items that have been removed. Based on the discussion on the Goodnature Juicing Facebook group, there are other juice companies using these new devices as well, like Fully Rooted, whose custom smart fridge is pictured below. The best part about this system is that the sales are still going direct to consumer from the juice maker, meaning there is no wholesale aspect, and therefore, no pasteurization laws to worry about (this is my own opinion, make sure to consult your local health department). Many customers have tried things like this in the past, but technology (up until now) has made it hard to manage inventory, temperature, and sales remotely. I feel very optimistic about these new devices and how it can help our Goodnature Family sell juice to more people in their local communities.

Using a Separate Food Processor with a Goodnature Press (Pros and Cons)
Lately there has been some discussion on the Goodnature Juicing Facebook Group and other forums about using a separate food processor like a Sammic or Robot Coupe in addition to, or instead of the attached grinder on a Goodnature press. We have studied this extensively at Goodnature, and for a while even sold a press that required a separate food processor. There are some important reasons why we don’t sell that machine anymore, and I thought I would make a post on the pros and cons of using a food processor. Here we go…. The Pros Pro #1: Increased Hourly Production (if using X-1 Mini or M-1) When the grinder isn’t attached to the press, you can grind while the press is pressing. This means that as soon as the press is done, you can pour in the pulp for the next batch and get pressing again right away without waiting for the grinder between pressings. Ultimately this can lead to more batches per hour, which means more juice per hour. If you find that you are reaching capacity with your X-1 Mini, adding a separate food processor could be a good way to bridge the gap while you save money for a full size X-1. In order for this to be true, you need to have your process set up in a way that you are actually saving time, and not just using two machines to do the same work as one machine. Many times, we saw that the user would still be grinding, then pressing, then grinding again, even with a separate food processor. This led to being less efficient, not more efficient. If using a full size X-1, it’s much more efficient to use the attached EG-260 Grinder that comes with the press. We have seen many businesses make 100 bottles of juice per hour (and more) on the X-1 with EG-260, and that production rate is not possible if using a separate food processor since the capacity of the food processor is much less than that of the X-1. Pro #2: Extra Control With a separate food processor you have more control over the grind. You can grind extra fine or extra course, depending on the ingredients being juiced. This can lead to higher yield and improved processing for some ingredients. Note that the full size X-1 does already have some control over the grind, by changing blades and grind speed so this doesn’t apply as much to the X-1 as it does to our smaller machines.

How to Create a High Yield Juice Recipe
When formulating recipes, it’s important to keep in mind that some fruit and vegetable varieties make a lot more juice than others. On the “non-juicy” end of the scale we have sweet potato and leafy greens. On the other end we have watermelon and cucumber. Getting a high yield is not just about using juicy produce. You need to create a good balance of both juicy and non-juicy items. The chart above shows some commonly pressed produce varieties and where they fall on the Yield scale. Obviously, the chart is missing hundreds of other varieties, but you can use your imagination to predict where that produce would lie on the chart, since it’s probably similar to something else on this chart. Using This in Practice If you’re formulating a recipe that’s heavy in leafy greens, you can try to balance it out with something on the juicy end of the chart, like cucumber to give you a nice, consistent output. It’s also important to try to balance recipes out going the other way: If your recipe is mostly on the juicy end of the chart, add some more fibrous vegetables from the other end. This creates a better “pomace” for pressing. Ideally, when creating recipes using a real two stage juice press like a Goodnature machine, you want to create pomace that can stay firm, but juicy in the press while it’s operating.
